The 2023 DAOU Cabernet Sauvignon is a true reflection of Paso Robles. The nose is intensely fragrant, with aromas of black cherry, cassis, plum, desert sage, sandalwood, and an earthy minerality. Secondary aromas reveal notes of cigar box, leather, bay leaf, and black olive. On the palate, it is rich and full-bodied, offering generous flavors of black raspberry, spiced currant, and blueberry compote, with hints of Bing cherry, blackberry, fig, and confectionery spices. Ripe, fine-grained tannins lead to a structured finish with lingering notes of cherry, espresso, and vanilla.
